FAQ's - Key facts about our dark rum
Meet the Sentinel Scented Rum - a premium rum with origins from Paraguay’s oldest organic sugar cane mill and matured in-house using our innovative “Acoustic Ageing” method. This process combines ultrasound, heat, and oxygen to enhance the toasty wood notes from American and French oak and PX-Sherry cask. The result is a clean, dark-amber finish and remarkable depth of flavour akin to a 12 year old barrel aged rum. Experience aromas of cocoa, butter toffee, dried fruits, and a palate of caramel, vanilla, peach, and lychee.
Our innovative Acoustic Ageing method is a closed system featuring a "reactor" that houses a basket for the three woods, an ultrasound sonotrode and a pump system that allows the distillate to flow through the system. Together with heat, oxygen and the oscillations of the ultrasound sonotrode, we emulate the micro-syntheses of conventional barrel aging, ensuring a remarkable depth of flavour. Over the course of days, we achieve the maturity akin to a 12 year old barrel-aged rum. This accelerated process is also sustainable, by disassembling casks into smaller reusable segments, we not only minimize waste but also significantly reduce the quantity of wood required.
